Whole Wheat Penne with Healthy Spinach Pesto
For 2 servings
Ingredients
-4 ounces whole wheat penne pasta, prepared according to package directions
-3-4 cups baby spinach
-1 egg *(optional)
-2 tbsp olive oil
-1/4 cup parmesan cheese (more or less to taste)
-1/4 tsp crushed red pepper (more or less to taste)
-1/8 tsp garlic powder (more or less to taste)
-Salt and pepper to taste
Directions
-Prepare pasta according to package directions
-Meanwhile, prepare pesto: In a food processor, grind 3-4 cups of
spinach until fine. Add in 1 egg and pulse until combined. Slowly pour
in 2 tablespoons of olive oil. Pour pesto into bowl. Mix with parmesan,
crushed red pepper, garlic powder, and salt and pepper. Serve over hot
pasta. Top with additional parmesan if desired.
